How to make clean eating fit your budget

Today’s guest post is from Mandi, a fruit and veggie enthusiast, over at Big Tiny Steps where she shares how to live a happier, healthier lifestyle. She’ll be sharing with us how to make clean eating on a budget work. Five years ago my family was approximately $80,000 in debt. The journey we undertook to become debt free made us fall in love with numbers and budgets. But now I have a new love. Eating clean. Eating clean with a diet consisting of mostly plant based foods has various health benefits. I know I personally have reaped the rewards that…

How I plan simple, healthy meals on a budget

[et_pb_section admin_label=”section”] [et_pb_row admin_label=”row”] [et_pb_column type=”4_4″] [et_pb_text admin_label=”Text”] Food. We need to eat it (duh) and sometimes making that happen every day can be overwhelming. Especially when you have a family to feed and a budget to stick to. As a mom, business owner and someone who puts a lot of pressure on myself to feed my family well, meal planning is a must. When I slip up and don’t plan, we end up eating out or eating junk. And spending a lot of money. When I do meal plan we eat delicious, wholesome meals that I’m proud to feed…

What I Fed My 1 Year Old Toddler in a Week

Balancing getting everything done in your life and feeding your toddler good food isn’t an easy task! Luckily I start making strides toward eating better several years ago so transitioning into making little bit sized versions of healthy food wasn’t too hard. But still, I get stumped sometimes. Especially when Atlas is in a picky phase where he suddenly hates everything he used to love. For a week I did my best to record everything I fed him, with the exception of going out to eat a couple of times. Of course, this varies a ton week to week. I…

    Vegan “Tuna” Salad Sandwich

After cooking up some chickpeas last week and throwing them in a jar I swear they would taunt me from the top shelf of the fridge every time I opened the door: “You better use us up before we spoil!” There’s nothing like guilt of something going bad because you never got around to using it right? Well I had been craving a mock tuna salad sandwich for a while now, boy they are good. To be truly honest, I don’t remember exactly what tuna tastes like, but this is delicious. And much less fishy, for obvious reasons (like, no…

How to Make Homemade Pizza on the Stove

homemadepizzaonthestove For many people, especially those of us without the luxury of air conditioning (yes, I’m complaining again), summer means avoiding the oven. The last thing I need on a 95 degree day is to add more heat. I do not do well in heat. I’m one of those people that breaks out the old shorts, stained tank top and puts my mess of hair in a sweaty bun. It’s amazing my husband still finds me attractive. Although I throw every care about how I look out the window due to how much effort it takes to just “be” when…

    a simple loaf // recipe

Bread. I love it. I am never going to be one of those people who gives up carbs, its just not going to happen. But I have always wanted to bake bread for us regularly instead of relying on store-bought bread. You can grab a loaf of cheap white bread at the store for $1 so why put the effort into baking bread? Because it’s delicious. No joke, I would choose my simple homemade bread over most store-bought brands and varieties. It is just a simple white bread, not a fancy organic, multigrain, super healthy bread. But I know exactly…

Vegetarian BLT Sandwich // Simple + Healthy

At our house, we don’t eat meat. I say this a lot, I know. We also avoid fake meat for the most part. I know a lot of Vegetarians rely on fake meat products, but I prefer to eat as many whole foods as I can. Plus, around here Morningstar and other similar products are expensive so they don’t really fit into our budget. One fake meat product I buy on occasion is fake bacon (facon!) or sausage (fauxsage? heh) because Blaine loves my Vegetarian Biscuits and Gravy for breakfast on weekends. Since Blaine comes home for lunch, I make a…

    Vegetarian Biscuits and Gravy Recipe

I’ve mentioned it before, I don’t really like breakfast. The past few days I’ve had caprese sandwiches for breakfast. My husband, on the other hand, loves breakfast. Waffles, eggs, pancakes, you name it, he loves it. Biscuits and gravy is one of his favorites when we’re out at restaurants and though he does his best to avoid meat, he does give in once in a while. I decided to give biscuits and gravy a try using fake breakfast sausage. It took a few times to tweak the recipe, but I’ve come up with my go-to recipe for Vegetarian Gravy! We…

    Vegetarian Sloppy Joes Recipe

Last night I decided to try to make Vegetarian Sloppy Joes with the Textured Vegetable Protein (TVP) that has been sitting in my cupboard for months. Sloppy Joes remind me of summer and eating outside. The funny thing is, I’m pretty sure I get that picture from commercials or some kind of marketing because I’ve only had a handful (if that) of sloppy joes in my life. Coming from a family with a Filipino mom cooking dinner let’s just say it wasn’t really on the menu. This recipe uses Textured Vegetable Protein aka TVP. If you don’t know what that…

No-Noodle Vegetarian Zucchini & Tofu Lasagna Recipe

I love Italian food. Spaghetti, lasagna, eggplant parmigiana, you name it. What I don’t love about Italian food is that gross, overstuffed feeling I get probably 90% of the time because it’s so good I overeat and it’s so heavy in all it’s carby, saucy goodness. Then came this recipe. Blaine and I usually devour half of this lasagna when I make it and I don’t even feel guilty. Check out the nutritional info at the very bottom. Not too bad, friends. It’s filled with veggies, tofu & cheese. What’s not to love? Keep in mind because there are no…
